Yucatan as USA State

Not sure what you're talking about. In 1848 OTL Second Republic of Yucatan rejoined Mexico. I'm not aware that they ever petitioned to join the Union.
 
so what if instead of Yucatan Petitioned to become US State at 1849 they did it at 1848?

what will the change do to modern day?

It never petitioned to join the union. Some of the elites of a breakaway region mentioned the possibility of US assistance, but statehood was never really going to happen.
 
Providing that the transition went smoothly with no objections(doubtful) from
Mexico, there's also the Caste War which lasted over 50 years. Americans would have to have either a larger Navy to transport soldiers and marines or somehow acquire Cuba from Spain as a dropping point. And if possible send Buffalo Soldiers to help pacify the Mayans. On the plus side, our cuisine would've been more Caribbean earlier.

It's going to take more than a couple Buffalo Soldiers to take the Maya there. They were not small bands off hunter-gatherers or a confederation of horticulturalist, but they were virtually the entire peasantry. Confederate ACW veterans were hired in large numbers to fight in the Caste War and they all died. This would not be a walk in the park, but a serious commitment of US resources that the States would probably not find worth it at the time, especially when there's a whole half a continent that has yet to be colonized by them.

Building off of this, I also wanna add that if (and I do mean if cuz of its unlikelihood) the Americans commit more to the Yucatan, it would completely change the outcome of the Mexican-American War. If the US gets involved in the Yucatan, the resources originally used to invade Mexico will be used elsewhere, extending the war and potentially ending it on more favorable terms for Mexico.
