Umm. St Thomas could decide to go North into central asia instead of South to Malabar but what would attract him? Malabar with its cities and open trade ports was much more fertile ground than the wilds of Turkic central asia.

In any case there were tons of Christian Mongols IOTL- a lot of them were Nestorians. Islam only gained influence somewhat later.

Also can I point out that Islam is an Abrahamic and not an Eastern religion.

This situation is a bit anachronistic. The Mongols did not exist as a discrete ethnic group during St. Thomas's time. They were probably a part of the Xianbei nomads.
 
I don't think Mongols would follow the Christian traditions and would stick to their old tribal ways. They would still be a threat to Europe

However, most significant outcome would be getting Berke out of the picture, and Hulegu would be free to exact his revenge on Egypt after Ain Jalut
