Serbia vs Albania

Is there a way back in the 1990's that Serbia and Albania end up going to war over Kosovo? What if Macedonia joins in as well against both?

Why wouldn't Macedonia just sit back and watch the carnage? In particular because of that large Albanian minority in Macedonia.

If it looks like Albania is going irredentist (and if it's intervening in Kosovo, it probably is) then it's in the interest of Macedonia to ally with Serbia because of that very Albanian minority.

Precisely. No three-way war like OP implied.

During the 1998 Kosovo War, Albania intervenes and invades the region. They'd probably be welcomed in by the Kosovar rebels. Would make it very tricky for NATO when they decide to intervene

You'd need an earlier POD so that the Albanian government isn't too busy robbing their own citizens with a nation-wide pyramid scheme.

You also have to consider how effective would the Kosovo rebellion have been if Albania didn't collapse in 1997. The flow of arms from the collapse led to the Kosovo rebels having a constant supply of arms, even if the arms were outdated. In a war, I'd think it end in a stalemate. Albania lacked resources, while Serbia seemed to depleated from the Yugoslav wars. Perhaps a short week long conflict with a UN meditated cease fire
