And who served as Regent of the United Kingdom until Charles became of age in November 1966?

Maybe Elizabeth II's mother, Elizabeth the Mother Queen served as Regent for her grandson until he turned 18 but I don't know.

Perhaps duke of Gloucester was regent since he was closest on line of succession after princess Margaret whom no one could even think being regent. Probably she even wouldn't want that.
It says Mountbatten was regent on the wikibox.
 
Oh, well I guess I'm blind then. But wouldn't Mountbatten be regent until Charles turns 18 in 1966? It says in the wikibox he only served until 1964, when Charles was 16.
Mountbatten is killed in 1964. After the death of Mountbatten, Charles is determined to reign for himself in memory of all those he had lost in the last few years. He gets the blessing of the Queen Mother, who would have been Regent, and the Prime Minister, and Charles'remaining father figure, Macmillan.

I plan to make an Infobox of the election of the mayor of the Shire/Michel Delving but that would be quite difficult to do, the mayor being simply elected every 7 years at the end of Michel Delving's Free Fair in a process that is not very institutionalized or competitive.[...]

The Quebec National Hockey team is the pride of the Republic of Quebec, born after the messy independence process of 1995-96. Nicknamed for the National Bird, “Les Hiboux” take their colors and symbols from the national flag.

They go for the stripe of the Habs, and the Fleur de Lis of the recently departed Nordiques. The choice of the blue to be different from the flag was allegedly to further support the Nordique fan base, commonly thought to have pushed the referendum over the line. This allegation was wrong. It was also alleged to be similar to the Bloc/PQ Leaders. This allegation is also wrong. The truth is that the designers were worried matching the flag colors would result in a jersey that looked too much like a Leafs Jersey.

Memorable moments include their first game in Canada in 2000, a victory but one that seemed to heal wounds. Gold medal in Turin, as well as knocking the Canadians out of their own tournament in 2010.

How is Harold going ITTL? Charles was going with George VII in OTL but kept his maiden name.

ITTL Charles was only just 10 years when him became king so it is pretty reasonable that he would use name George. Futhermore George VI was still in fresh memory of British people. In OTL Charles was already over 70 when him became king and there wasn't any idea change his name since he was known so long as Charles.

The Prince of Wales is a bit of a marmite figure to the British public. You either love his interventions (similar to OTL Charles before his accession) or you hate his meddling in political affairs. He is a very good father to his children, evidenced by the Duke of Wessex who is exceptionally popular and perhaps unlike others in his family, very humble. So much so he insisted on attending a normal college in Watford. This is going to lead to a scandal as intrusive press do their usual stalking behaviour and discover that he's gay. Some in the press try to spin this into an attack story, which goes over abysmally with the public who rally around the Duke. The PM, who is openly gay, also resoundingly condemns the intrusion and their attempts to spin it as a negative. The royal family, including the Prince of Wales and the King himself, back him all the way. The Prince of Wales comes out publically with a written statement, in his own time.
